I agree, you would have thought Sun-Pat would have invented a special shaped knife designed to scoop out the bottom.

If you put the knife in so that your thumb is pointing down towards the rim of the jar, and then scrape the knife under the lip on the inside but push your hand outwards and away from your body, you can scoop out the rest of the 'butter. I am a pro.
